Serves 2 people
6 eggs, knob of butter, peppers, mushrooms, chorizo slices, grated mozzarella, and grated cheddar.
Whisk together the eggs, let the butter melt in the frying pan and add the sliced vegetables and chorizos until nice and soft. Add to the beaten eggs and let it cook until the top of the omelette is nearly solid. Sprinkle over your grated cheeses, and flip over one side to serve,
