Quick and Easy Keto Family Favourites

Whether you’re looking to ease into the back-to-school routine with simple, keto versions of family favourites or craving a plate of comfort food with a low carb count, these keto meals have the power to banish the end of summer blues.

Keto Burgers

First up is the big shot of all comfort foods – mouth-watering, mouthfuls of savoury joy: a good old-fashioned burger. Veggie, vegan or meaty – burgers are designed to make us love every bite.

Of course, with a keto or low-carb diet, bread is a key food to be aware of. And not all low-carb breads are created equally. That’s why Heidi (Heylo’s founder) made it her mission to create Heylo Sliced Low Carb and Keto Bread – only 0.3g carbs per slice. And now we have Heylo Low Carb and Keto Bread Rolls – they freeze brilliantly, easily carry a burger with all the toppings, are soft enough to soak up sauce and just as chewy as high-carb bread.

For a keto burger in a hurry, keep a few Heylo rolls in the freezer.

Of course, burgers can be bought frozen, but are also delicious made fresh then kept in the freezer. Here is our quickest, easiest meat patty recipe…

  • 500g beef mince
  • 1 egg
  • 1 tbsp butter or vegetable oil

Makes 4 thick burgers or 6 thin ones.

Step 1

Tip 500g beef mince and the egg into a bowl then mix.

Step 2

Divide the mixture into four. Lightly wet your hands. Carefully roll the mixture into balls of equal size.

Step 3

Press in the palm of your hand and gently squeeze down into patties. Make sure all the burgers are the same thickness so that they cook evenly.

Step 4

Brush with oil or butter.

Step 5

Bake in a 200 degrees Celsius preheated oven for 30 minutes or fry until cooked through.

 

For vegetarians, a wedge of halloumi makes a lovely low-carb burger.

Vegan choices include a juicy Portobello mushroom or Quorn Meatless Gourmet Burgers. (These are keto friendly but be aware that not every Quorn products is.)

 

Then add your favourite fillings…

  • Pickles, tomatoes, lettuce add freshness.
  • A rasher of bacon or fried egg will boost protein content.
  • Sliced cheese (can be frozen if individually wrapped).
  • Mayonnaise – Hunter and Gather Mayonnaise in classic, garlic or lime and chipotle has zero added sugar or nasties
  • Ketchup – Hunter and Gather Tomato Ketchup in BBQ or Chipotle also has zero added sugar.
  • Finally, pair with some keto sides – coleslaw, salad or cauliflower cheese.

 

Keto Pizza

Next up is an all-time favourite – hot or cold, lunch or dinner, fancy or simple. Stringy, salty mozzarella, the sweet tang of tomato and a crispy, chewy base. Pass the kitchen scissors, let’s slice up some delicious low-carb pizza.

And because they’re so freeze-able, pizzas are great for keeping on hand for a quick meal. Low-carb pizzas can be made from cauliflower, coconut flour, protein powders or even meat. They each have their pros and cons, but after the arduous task of extensive pizza tasting, our current top choices for ready-made are Seriously Low Carb pizzas and plain bases and Lo-Dough pizza bases. Both are based on wheat protein – so not for gluten-free folk – but they do deliver on that baked chewiness and crispy crust.

If you have a particular taste in toppings or want a great way to get kids engaged with their food (and their fingers busy for a few minutes), then freeze-able plain bases are the way to go.

Store-bought passata or homemade pizza sauce blended from canned tomatoes is low carb and can be batch prepped and frozen into portions – even using an ice cube tray!

Grated mozzarella or cheddar can be frozen – just bash the bag to separate the strands before and after freezing, then sprinkle on top of your pizza before putting in the oven.

Meaty low-carb toppings include: ham, bacon, mince, leftover roast meats, sausages or even a dollop of curry.

Veggie low-carb toppings include: keto-friendly Quorn, extra cheese – sliced or grated, chunks of halloumi, leafy greens, courgettes, mushrooms, radish, peppers. Pre-cooked veggies are also great to use as pizza toppings – this is because the moisture has been removed so they help avoid soggy pizza bases.

Pizza seasonings that will finish your dish perfectly are basil, oregano, rosemary and garlic.

 

Keto Four Ways with Minced Meat and Veggie Mince

Lastly, for a batch cook that will keep the family going for days without boredom kicking in, try cooking up mincemeat or veggie mince (about 500g usually feeds a family of 4 for one meal) with your chosen vegetables.
