Instructions

  1. Place a large saucepan over high heat.
  2. Fry the butter and garlic.
  3. Add the cauliflower.
  4. Add the heavy cream, chicken stock, salt and pepper.
  5. Bring briefly to the boil then simmer for 15-20 minutes (until the cauliflower is softened).
  6. Fry or grill the bacon to desired crispness.
  7. Blend the soup (not adding the bacon yet).
  8. Add the chopped bacon and parmesan cheese into the soup and mix well.
  9. Top with crispy bacon croutons.
