THE COMPLETE JOURNEY
I've been up and down with my weight since I was 17. You know the story - the classic yo-yo pattern.
I'm an emotional eater. When I open a pack of biscuits, I can't just have one - I'll finish the whole pack. Then it's "oh well, I've blown it today anyway" and that turns into weeks or even months of terrible eating and quite rapid weight gain.
I'd get too scared to look at the scales, but I'd know from how my jeans felt. Anyone else have "fat clothes" and "thin clothes" in their wardrobe? Because that was definitely me for years.
I still went out but didn't enjoy getting ready or looking at any photos of me. Getting ready was torture, and photos? I'd dodge the camera or make sure I was always behind someone else.
THE TURNING POINT
When I turned 40 and Covid hit, we suddenly had time to focus on our health. My best friend mentioned she'd been trying low carb and felt amazing - more energy, sleeping better, and she'd lost some weight too.
I'd heard about it before but never really looked into it properly. With lockdown giving us more time at home, I thought why not give it a go?
THE DISCOVERY
I researched the science behind it - the studies on protein, fiber, blood sugar stability. It wasn't just another fad diet; it actually made sense nutritionally.
Within a few weeks, something clicked. Those constant sugar cravings that would trigger my binge eating just... calmed down. I wasn't thinking about food all the time.
I lost 4 stone in 6 months, but honestly, feeling in control around food again was even better than the weight loss. I could eat one piece of something and actually stop.
THE PROBLEM
The only issue was giving up bread. I love bread - toast in the morning, sandwiches for lunch, garlic bread with dinner. It's comfort food, right?
So I tried the low carb alternatives. They were awful. Eggy, dense, weird chemical taste. I'd eat them because I "had to," but they felt like punishment food.
I thought: surely we can do better than this? What if we could make low carb bread that you'd actually look forward to eating?
THE MISSION
That's how HeyLO! started. Months of testing recipes in the bakery - too dense, too dry, wrong texture. When we finally got our first loaf right - the Artisan Seeded - it was genuinely exciting.
It smelled like proper bread, toasted like normal bread, and at 0.3g carbs per slice, it worked perfectly.
THE BEAUTIFUL DISCOVERY
We launched during lockdown, and something wonderful happened that I hadn't expected.
Messages started coming from people managing diabetes, telling us how HeyLO! was helping them enjoy bread again without affecting their blood sugar.
"I can finally have toast without worrying about my levels," one customer wrote.
I was honestly amazed. We'd created it for people like me wanting to manage their weight, but it was genuinely helping people with serious health conditions too.
TODAY
I still follow low carb, but let's be honest - it's still a daily choice. I wouldn't say I maintain my weight easily. I do indulge in baked sweet treats and other things, but what's different now is I know I can go back to HeyLO! and I feel in control again.
Even if it's just one meal a day where I'm making better, healthier choices for me, that feelingof control helps reduce those binge episodes. The biscuit raids still happen occasionally, but they don't spiral like they used to.
What makes me happiest is hearing from customers who've found that same sense of control.
Whether it's breaking the yo-yo cycle, managing diabetes better, or just having one part of their day that feels like a win - that's what it's all about.

I'd love one day to launch scones that taste like the real deal - because I bloody love them!
If we can crack the perfect low carb scone, I'll know we've truly mastered this whole bread thing.
