This feta baked eggs recipe is the perfect way to elevate your mornings! You can prep these for a crowd, or prep them for yourself, and heat quickly each morning. They are also delicious cold as a sandwich or jacket potato filler. They go perfectly on a crispy toasted bagel, or a crunchy piece of toast.
Ingredients

200g block of feta cheese

Smoked paprika (to taste)

Black pepper (to taste)

Chilli flakes (to taste)
To Serve:

Avocado

Smoked salmon

Chives
Directions
Add the feta and eggs to a greased baking dish.
Season to taste: we recommend black pepper, smoked paprika, and some chilli flakes if you like heat! You probably won’t need salt as feta can be salty – and you can always salt later.
Lightly whisk the eggs to break the yolks.
Bake in a preheated oven at 180°C for around 20 minutes – until the egg whites have just about set.
Once out of the oven, mix the feta and cooked eggs together.
Serve on your HeyLO! Bagel, Lighter White Bread or your bread of choice – this goes perfectly with some bacon, avocado or smoked salmon!

Tips & Variations:
- If your egg whites are not fully set, don’t worry as the residual heat will finish cooking them as you mix everything together
- You can add chopped peppers and cherry tomatoes into the mix to make this like the Turkish dish, menemen
- These will reheat in the microwave throughout the week - just add a splash of milk and cook until piping hot. They should last 3-4 days in the fridge
- You can eat these cold - kind of like egg mayo, on jacket potatoes or sandwiches
