This keto version of the original winter stew is a perfect comfort food and so quick and easy to make. Once you are prepped, get it in the oven and leave it to cook itself!

Keto Beef Stew Recipe

Ingredients

  • 800g beef chuck steak, cut into 1 inch cubes

  • 3 chopped large onions

  • 350 ml bone broth or 2 stock cubes in 350ml hot water

  • 5 chopped carrots
  • 4 sprigs thyme
  • 1 chopped turnip
  • Chives to garnish

Directions

  1. Heat the oven to 180C (160C fan)

  2. Add chopped turnip, chopped carrots and thyme

  3. Chop and fry onions and add to casserole dish

  4. Add beef chuck steak, season with salt and pepper

  5. Pour in bone broth or stock then put the casserole to the oven for 90 minutes

  6. After 90 minutes, return to the oven for another 30 minutes leaving the lid slightly ajar

  7. Remove from the oven, taste and season and top with chopped chives
