Low Carb Veggie Sausage Stew

Low carb - but will vary depending on the sausages used

A protein-packed, veggie stew - perfect for more casual low-carb diets.

If you are looking to eat less meat in your diet or happen to be fully vegetarian and following a low-carb plan, this is a great recipe to have up your sleeve.

Served with buttered bread on the side to mop up all the gravy, this is comfort food heaven.

  • Dice and fry shallot and garlic in a large saucepan for 5 minutes.
  • Add tomato puree and Worcester sauce, stock and thyme, bring to the boil then simmer for 5 minutes.
  • Add the apple juice into the arrowroot mixture, season to taste and remove from heat.
  • Fry Quorn sausages for 8 minutes until golden, turning frequently.
  • Chop the cooked sausages then add to the pan.
  • Top with plenty of grated cheese and return to oven for 10 minutes.
