Low carb bruschetta - the simplest low carb starter!
This Italian inspired starter couldn't be more simple and makes the perfect start or light lunch.
Using our low-carb subs as we have done here, or go with rolls if you prefer. Both are available in our low carb shop now.
Ingredients

1 low carb sub, cut in half lengthways
- 1-2 ripe tomatoes, chopped into rough dice
- 1 clove garlic, halved
- Extra virgin olive oil
- Basil to garnish
Directions
Heat up a pan or griddle, drizzle you sub halves with oil and toast the flat sides face down in the pan
Mix your tomatoes with seasoning to taste and more olive oil and the basil
When the subs are toasted, take them out of the pan and rub with the garlic
Pile the tomatoes on the garlicky bread and serve.
