Pesto Chicken

4 chicken thighs or chicken breasts
200 ml double cream
3 tablespoons pesto
Handful pitted olives
Salt and pepper
2 garlic cloves, finely chopped
Butter, for frying
Couple of cherry tomatoes
Cheese to top with
Instructions
Preheat the oven to 400°F (200°C).
Cut the chicken filets into pieces. Or thighs as whole. Season with salt and pepper and fry in butter until golden brown.
Mix pesto and heavy cream in a bowl.
Place the fried chicken pieces in a baking dish together with olives and garlic.
Add the pesto mixture.
Bake in oven for 20-30 minutes, until the dish is bubbly and light brown around the edges.
Sprinkle cheese on top.
Serve with greens – enjoy!
