Ingredients
-
4 HeyLO! Low Carb White Sub Rolls
-
2 8oz rump steaks (fat trimmed)
-
2 green peppers (thinly sliced)
-
1 white onion (thinly sliced)
-
3 tsp garlic puree (or 4 cloves crushed garlic)
-
2 tsp smoked paprika
-
2 tsp oregano
-
10 slices mozzarella cheese
-
2 tsp butter (melted)
-
2 tsp dried parsley
Directions
If you have time, freeze your steak for 20-30 minutes; this will make it easier to slice. Slice the steak against the grain in thin strips.
Add 1 tsp butter and 1 tsp oil to a pan. Add the peppers, onions and season with salt and pepper.
Cook until the onions and peppers begin to brown on the edges – this should take 5 minutes.
Once the veggies have browned, add in the steak, and toss this for a couple of minutes until it begins to colour.
Finally add in 2 tsp garlic puree, paprika, oregano, and season to taste with more salt and pepper if needed.
Slice the sub rolls altogether, so that you have a bottom half and a top half with the lids.
Place the sub rolls into an oven proof baking dish, and add a layer of sliced cheese.
Spread the steak mixture across the sub rolls, add the remaining sliced cheese and top with the sub roll lids.
Mix up the melted butter, remaining garlic puree and parsley, and brush all over the lids of the sub rolls.
Oven bake at 170°C for 10 minutes – until the tops are golden and the cheese is melted.
