Serve with whipped cream, a few raspberries or strawberries or why not buy frozen berry mix and heat in a saucepan with a bit of water and vanilla sweetener – instant low carb friendly coulis!
Ingredients
- 8 oz Cream Cheese (full fat)
- 8 eggs
- Tsp of vanilla extract (optional)
- 1 Tsp baking powder
- 40g Coconut flour (or can use 70g almond flour if you’d prefer).
Directions
Place all ingredients in a blender and mix until nice and smooth.
Either spoon into your waffle maker direct or health up some butter in a frying pan and spoon in the mixture to make pancakes.
