This is a dreamy low carb salad that is perfect for anyone following a low carb diet. We’ve added the keto diet favourite, bacon, but feel free to leave out or replace with whatever ingredient you like.

Lower carb bread croutons you say?

To make the croutons, simply tear or dice your bread up and fry or bake in oil until golden and crunchy. You can season with herbs, garlic, spices, parmesan, lemon zest... anything you fancy.

  • To make the avocado egg salad: In a medium bowl, add diced eggs, avocado, bacon, cream, mayonnaise, cilantro, and lemon juice and combine with a spoon until creamy.
  • Garnish with additional bacon, eggs and cilantro. Serve with whole-grain toasts, as a filling for sandwiches, or enjoy as a salad.
