A luxurious and moreish keto soup that doesn't half eat will with a slice or two of Heylo's lower-carb bread.
Cheese and bacon soup might sound a little whacky, but cheesy soups are fairly traditional and loved in countries like France and the USA. They are also perfect for the keto diet. Rich, indulgent and super comforting, you should definitely give this a go. Serve with a low-carb roll or slice just for good measure!
Ingredients
- 30g butter
- 1 medium head cauliflower, cut into evenly sized florets
- 500mls chicken stock
- 300mls heavy cream
- 200g bacon, thinly sliced
- 200g shaved parmesan cheese
- Salt and pepper

Directions
Place a large saucepan over high heat.
Fry the butter and garlic.
Add the cauliflower.
Add the heavy cream, chicken stock, salt and pepper.
Fry or grill the bacon to desired crispness.
Bring briefly to the boil then simmer for 15-20 minutes (until the cauliflower is softened).
Blend the soup (not adding the bacon yet).
Add the chopped bacon and parmesan cheese into the soup and mix well.
Top with crispy bacon croutons.
