The kind of low carb food that brings back memories...
Some dishes never go out of fashion and we thought this 80's dinner party favourite was due for a low-carb makeover. By replacing the usual rice, couscous, bulgar wheat, or regular bread often found in a stuffing, you can massively reduce the carbs of your meal. Serve alongside a slice or two of Heylo's keto loaf or rolls for maximum satisfaction.
Low carb cooking tip!
Heads up! A green bell pepper is lower in carbohydrates than yellow or red peppers.
Ingredients
- 4 Bell Peppers, Mixed Colours
- 450g of ground beef
- 230g of Creamed Cheese, Softened
- 180g of Grated Cheese
- 2 Tablespoons of Taco seasoning or Chilli Powder
- ½ teaspoon of salt
- Sour cream (optional)
- Coriander (optional)
Directions
Preheat the oven to 350 degrees. Cook the ground beef in a skillet over medium heat until browned. Season with salt.
In a large bowl, combine the cooked ground beef, cream cheese, taco seasoning and one bell pepper diced.
Slice the remaining bell peppers in half from stem to end.
Add filling to each of the bell pepper halves.
Place the stuffed peppers on a parchment or foil lined baking tray or dish.
Sprinkle cheese over each stuffed pepper.
Bake at 350 degrees for 15 minutes or until cheese is melted. Garnish with sour cream and coriander.
