Low Calorie Mug Cakes for an After Dinner Treat
These raspberry mug cakes are delicious, low in carbs and make for a tasty and substantial evening treat or even breakfast dish (think fruit muffin in a cup!)

Prepped in just a few minutes using crumbs from our low carb loaf and cooked in even fewer, these redefine the meaning of fast food. Perfectly low-carb, these fruity beauties are just the tip of the iceberg. Why not swap out fruit for cocoa, or go with chocolate and fruit? Maybe even take the pre-prepared mix into the office (just put the wet mix into a Tupperware pot), transfer to a mug, microwave for two minutes and then head back to your desk to be the envy of all your colleagues?
Ingredients
- 2 slices of Lighter White Loaf
- 1 egg
- A dessertspoon of creme fraiche or a splash of milk
- A few drops vanilla extract
- Erythritol sweetener to taste (approx 1 dessertspoon)
- 5-6 raspberries (plus decoration if desired)
- Creme Fraiche and low-sugar fibre syrup to serve if desired
Directions
Blitz your two bread slices into crumbs
Whisk up the egg, sweetener, vanilla and creme fraiche and add the crumbs. Mix well, then stir through the raspberries.
Put the mix into a mug - it should come around half to 2/3 of the way up
Microwave on high for 2 minutes. Allow to stand for 1 minute after you take it out
