Meet Heidi: The HeyLO! Founder Who Wanted More from Her Food

For HeyLO! founder Heidi Normanton, that staple was bread.

Heidi's journey started with weight loss, but it quickly evolved into something much bigger – a complete transformation of her health and wellbeing. Like many of us, she'd spent years in a complicated relationship with food, feeling trapped by the cycle of blood sugar spikes, energy crashes, brain fog, cravings, and an all-or-nothing mindset.

When she discovered low-carb living and the keto diet, things finally clicked. What began as a goal to lose weight morphed into a broader mission to feel good, regain energy, and take control of her overall health. It morphed into an understanding that whilst low-carb living is key to staying ahead of the wellness curve, protein and fibre need prioritising too. 

She noticed the difference immediately: stable energy, a happier gut, and a sense of mental clarity she hadn't felt in years. The secret wasn't just removing carbs – it was replacing them with food to feel good about. Food genuinely rich in fibre and protein that kept her full, supported her gut, and gave her body something real to work with. She felt in control of her choices, rather than her cravings controlling her.

But there was a bread-shaped hole in her life that the existing alternatives just couldn't fill.

"The options out there were uninspiring, dry, processed, and just didn't taste like food. I thought: it’s only bread, why should we have to sacrifice the joy of a sandwich just to stay on track?"

Heidi's approach to food is rooted in sustainability, not restriction. She knew that for a lifestyle to work, it had to be enjoyable. It had to include variety, it had to feel easy, and it had to be food to feel good about. Most importantly, it had to include bread.

First, she committed to a low-carb lifestyle, but she didn't want a quick fix because she knew she would fall off the wagon. She wanted a way of eating that would help her feel vibrant every day and that would stick. But there was a problem: all the low-carb alternatives she tried were disappointing – dry, spongy, resembling cardboard that felt more like punishment than pleasure.

What’s more, those low-carb substitutes always seemed to forget other important macros like fibre and protein.  She knew that for this lifestyle to be sustainable she had to enjoy what she was eating, so she got busy in the kitchen. Twelve months in, the results weren't just about physical health, but making food to feel good about relieved her of the worry she would feel every time she put fork to mouth.

She found joy in making low-carb, high-protein, high-fibre meals and snacks that satisfied without the sugar crash. Most importantly, she found a way to stop the good food vs. bad food internal monologue for good.
