Here’s how to make it:

  1. Mix 3 blitzed slices of Heylo Lighter White, 30g Heylo Honeycomb Granola, 30g butter and half your sweetener for the crumble top.

Low Carb Cranachan

Cranachan with a twist! This Scottish dessert gets a low-carb makeover that’ll make your taste buds dance.

Let’s make this easy keto treat in a minute. We’re talking 5-10 minutes max and you’re done. Perfect for those “I need something sweet NOW” moments.

Here’s the deal: grab a blob of clotted cream and mix it with some whipped cream. Add a few drops of vanilla extract and you’re in flavour town.

Now, to the real star of the show - our own Honeycomb granola

Our secret weapon, replacing those carb-heavy oats in the traditional recipe. This stuff gives you all the crunch and sweetness you need, without the carb overload.

Add a handful of raspberries (save a few for garnishing your masterpiece), and you’re almost there. Mix it all up in a bowl, then pour into your favourite glass or bowl. Sprinkle the remaining raspberries and granola on top for that 'pro' look.

And there you have it - a low carb Cranachan that’s big on flavour, small on carbs (4g per serving). Who says keto desserts can’t be a bit posh?

Oh, and if you’re feeling naughty, a wee dram of whisky wouldn’t go amiss. We won’t tell if you don’t!

Low-Carb Raspberry Mug Cake

Let’s talk mug cakes. Specifically, a raspberry one that’ll blow your mind without blowing your ketosis.

This little beauty is quick as a flash - we’re talking 5-10 minutes from “I fancy something sweet” to “Mmm, that hit the spot”. Perfect for those late night cravings or when you need a breakfast on the go.

Here’s the clever bit: we’re using our Lighter White Loaf as the base.

Blitz a couple of slices into crumbs. Then, whisk together an egg, a blob of creme fraiche (or a splash of milk if you prefer), a few drops of vanilla and some erythritol sweetener. Add your bread crumbs and mix it all up.

Add raspberries, and pour it all into a mug, zap it in the microwave for 2 minutes and voila! A warm, fluffy cake that’s high in protein and low in carbs. 4g of carbs per serving.

Impress your family and colleagues with your microwave magic. This recipe can also be adapted to make a classic chocolate cake version.

Top with a bit more creme fraiche and a drizzle of low sugar fibre syrup if you’re feeling fancy.

American Style Low-Carb Pancakes

Love pancakes but not the carbs? I’ve got just the ticket. These American style keto pancakes will satisfy your breakfast cravings without blowing your diet. And at only 3g carbs per serving, they’re a treat.

Again, we’re using our Lighter White bread as the base

  1. Blitz two slices into crumbs (crusts off if you want a paler colour).
  2. Whisk together an egg, a splash of milk (about 50ml), a dessertspoon of sweetener and a pinch of baking powder.
  3. Add in your bread crumbs and you have a thick cake batter. Want it smoother? Chuck it all in a blender.
  4. Melt a knob of butter in a non-stick pan (or use oil if you prefer).
  5. Fry your batter on medium-high heat. Flip halfway through and you’re golden. Literally.

Top with whatever you like (Just keep it low-carb!). We went for berries, a dollop of creme fraiche and a drizzle of low sugar syrup. But get creative!

These aren’t just for dessert, you know. They make a great breakfast too.

Sweet Fluffy Pancakes or Sturdy Waffles

Meet our Sweet Fluffy Pancakes or Sturdy Waffles. They’re so good you’ll forget they’re keto friendly.

We’re using cream cheese as our secret ingredient. Full fat, mind you. None of that low fat nonsense!

To make our batter, add 8 ounces of cream cheese to a blender with 8 eggs. Add a splash of vanilla extract if you fancy. Then add a teaspoon of baking powder for that all important fluff.

Now, here’s where you get to choose your own variation. Want to keep it keto? Go for 40g of coconut flour. Prefer a nutty flavour? Swap it for 70g of almond flour. Either way you win.

Blitz it all up until it’s smoother than a cat on velvet. Then you have two options:

  1. Spoon into your waffle maker for crispy waffles that will hold up to whatever toppings you throw at them.

  2. Melt some butter in a pan and make pancakes. Remember, low and slow is the way to go here. Let them get nice and golden.

  3. Top with whipped cream and berries.

So there you have it. Pancakes or waffles that will satisfy your sweet tooth without derailing your keto diet.
