While your bread’s toasting, scramble two large eggs in a buttered pan over low heat. Want them extra creamy? Add a splash of almond milk.
Once your eggs are just how you like them, layer them onto the buttered toast with 60g of smoked salmon.
To really make it pop, top with chopped chives and crumbled goat cheese. It’s fancy but easy. Want a bit of freshness? Add a handful of berries on the side.
